I know its seems like everyone makes a new years resolution to lose weight, & for years I was one of those that always gave up after a few weeks… that is if I even started! Well 2 years ago, after I had my son, for the first time I actually stuck with it! I lost 29lbs in just over 2 months.
Well after I had the twins I went right back into my size 6’s, and I was in heaven!!!! Well with the stress of the divorce I managed to jump from a size 6 to a 12 in barely a month. At my highest weight I was only 4 lbs under my delivery weight with my son :(. I gained a total of 29lbs in under a month. Well its time for them to go away! My goal is to lose 38lbs, and since I started 10 days ago I have lost 9.2lbs! Thats 24% of the weight I had to lose.
Anyways last time I used Weight Watchers. I loved it because it was simple, they offered awesome tools & you can fit any type of life style into it. The first few weeks were hard, but by week 3 or 4 it had turned into a life style change. This time I am doing WW points, but I am tracking all of my food & exercise as well as my progress on this cool FREE site www.sparkpeople.com. They offer all the tools an resources of all the different diet & life style plans in one place. Even if you don’t know what you are doing they can help you plan out menus (if you choose) develop a work out that works for you, & they even have demos to show you how to properly do your exercises.
Anyways I tried a recipe from their sites catalog & it was YUMMY! So I figured, why not blog about it! It even got the approval of my 2 year old with a sweet tooth :), its a great healthy snack for the whole family! The only differeces I made was I was using a dark pan so I turned it to 375, & I added 1 tablespoon cinnamon, instead of a teaspoon. I even took a picture when they were done! These only have 93.5 calories & 0.5g of fat. They are only 2 WW points.
Applesauce Oatmeal Muffins
Ingredients 1 cup old fashion rolled oats (not instant)
1 cup non-fat milk
1 cup whole wheat flour
1/2 cup brown sugar
1/2 cup unsweetened applesauce
2 egg whites
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. sugar
raisins or nuts (optional)
Soak the oats in milk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together.
Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Combine the cinnamon and sugar and top each muffin with some of the mixture.
Bake for 20-25 minutes or until done.
Remove from pan, cool and enjoy.
